A happy face and an unhappy face

Recently I was chatting with some friends and family. During the conversation, I was struck by the differences between the personal tastes and preferences of the people with whom I was speaking. What makes some people like science, while others prefer to study history? What makes someone choose green, or orange or whatever as their favorite color? Why do some people like oysters and others do not?

Setting aside individual experiences as a determining factor in preferences, I am puzzled and in awe of how such preferences are formed in our psyche (or wherever they are formed.)
